Soup Konro Bakar (Soup Grilled Konro (Beef-Ribs)

Makassar, (Makassarese language: sometimes spelled Macassar, Mangkasar) is the provincial capital of South Sulawesi, Indonesia, and the largest city on Sulawesi Island. From 1971 to 1999, the city was named Ujung Pandang, after a precolonial fort in the city, and the two names are often used interchangeably. The port city is located at 5°8′S 119°25′E5.133°S 119.417°E Coordinates: 5°8′S 119°25′E5.133°S 119.417°E, on the southwest coast of the island of Sulawesi, facing the Makassar Strait. Its area is 175.77 km2 and has population of 1.33 million.

Konro is a name for beef-ribs in Makasar, South Celebes.




Recipe Soup Konro Bakar /Soup Grilled Konro (Beef ribs)


Ingredient:
1 kg beef ribs
6 cloves
Paste (grind all ingredients):
5 - 6 kluwak nuts, peel, soak in hot water
1 tsp peppercorn, roasted
1 tbsp corriander, roasted
1 tsp minced turmeric
1 tsp seedless tamarind
3 cloves garlic
7 shallots
salt and sugar as desired

How to cook the soup:
Sauté the ground ingredient and clove until fragrant, add beef ribs, stir and cook meat until lightly browned. Add 1 liter of water, and cook until meat tender. (Add water again, if you need it)
Add salt and sugar as desired, simmer over low heat 15 to 20 minutes. Serve with rice cake

Grilled Konro :

If you want to make Grilled Konro, just take some beef short-ribs of the soup, then grill.
